The Origin of Sushi

Sushi is believed to have originated in Southeast Asia, where it was called “sashimi” which means “pierced body.” Later on it made its way to South China and then to Japan, in the 1960s Sushi finally arrived in the United States and gained popularity since then. The first restaurant to introduce the world of Sushi to the United States was called “The Kawafuku” and is said to be “the first true sushi bar”.

The Origin of The Word Sushi

The word sushi comes from the word “susu,” which means vinegar. Sushi literally means “sour-tasting”, even though none of us probably ever have tasted sour Sushi, the reason for that is that the preparation of Sushi back then was a lot different. To preserve raw fish it was a common practice to put it into fermented rice, and later on add vinegar to it, they discovered that vinegar itself is such a good preservation that fermented rice wasn’t of any need anymore.

The first mention of sushi in written form dates back to 718, published in a book called “Yoro Code”. The Yoro Ritsuryo Code was a fundamental law in ancient Japan and served as a general prescription for the political system.

Types of Sushi

There are 6 types of sushi that are recognized by the government in Japan, and they all vary greatly in color, flavor, and texture.

Nigiri

The first and most popular type of Sushi is called “Nigiri” and consists of raw fish gently covering pressed rice. Nigiri’s origin is dated back to the 1800s where it was named “Edomae Sushi”. While other types of Sushi are served on a plate, Chirashi is served in a bowl or box, together with rice, raw fish and other ingredients.
